Potatoes & Pea Curry (Aalu Matar)

Potatoes & Pea Curry

Today, I was assigned by my mom to make potato pea gravy for my little sister. As, I always bring some creativity in my dishes and use some new ingredients so I tried it with this one too in a traditional way but modern ingredients 😉 So, I want my recipe to share with you all. Have a try and share your experiences.

Ingredients:

• Potatoes: 7 – 8
• Peas: 1 cup (frozen)
• Onion: 2 (medium size, small cubes)
• Tomato: 2 (medium size, small cubes)
• Ginger Paste: 1 tbsp
• Garlic Paste: 1 tbsp
• Whole Milk: 1 cup
• Green Chilies: 4 (cut in Julian Shape)
• Red Chilies: 2 (Julian Shape)
• Lemon: 1 (cut in slices)
• Coriander: for garnishing, as much you desired
• Vegetable Oil: 1 cup
• Water: 3 cups (can be added more as much you gravy want)

Spices:

• Red Chili Powder: 1 tsp
• Black Pepper Powder: 1 tsp
• Turmeric Powder: ½ tsp
• Coriander Powder: ½ tsp
• Salt: 1 ½ tsp (or as per taste)
• Sugar: 1 tbsp
• Cinnamon: 2 pieces (Broken)
• Cardamom: 2 pieces (Choti ilaichi)
• White Vinegar: 2 tsp
• Rooh Kewra: few Drops

Method:

• Firstly put vegetable oil in wok and heat it up, fry cardamom seeds, now add ginger-garlic paste and let it fry. In 2 minutes add cinnamon pieces and onion. Fry for 4 minutes or until get brown (at medium heat). Now, add tomatoes and green chilies in the wok and fry them on a medium heat until it is form into a paste.
Onion & Toamato Paste

• Add potatoes and peas into this paste, mix them up.

Without Masala (dtir Frying)
• Put all spices in it (excluding vinegar & rooh kewra). Mix it well, add milk and let it simmer for two minutes.

Potato With Masala & Milk (excluding Water)
• Add water and let it simmer for 20 minutes on low heat. Check it simultaneously (for softness of potatoes).
• Now, add vinegar and mix it. Oil will be on the top. Add few drops of Rooh Kewra (for tempting fragrance). Now, garnish it with red chilies, coriander and lemon slices.
• Eat it with cold salad and regular bread. You’ll never forget the taste. It’s a must try. 🙂

Nutritional Information:

• Potatoes and peas are not just rich in flavor but they also give your body essential vitamins.
• Potatoes are very useful for growing children.
• Potatoes also contain a variety of Phytonutrients that have antioxidant activity.
• Potatoes are also useful for lowering blood pressure.

Tips and Tricks:

• To look out more appealing for children you can add some food color sprinkle on the top with salads on side (strip cutting like cucumber or beet root).
• Roll it in Paratha or Baked bread and give them to your children for lunch in school. They’ll surely like it.
• Different shapes of potato can be cut for fun.

MOTICHOOR LADOO (BEADS LADOO)

My little sister always urges me to make different kinds of food which looks great and is tastier. Well, for that reason I tried my best not only to please my family but also to enhance my experience. Creativity is in my origin that’s why you’ll always find a bit bit difference in my recipes 😉 they are my favorite ones and I usually end up with so many types but a same thing. MotiChoor is named it because these are tiny droplets and tastes like heavens. They are so delicious that you’ll be unable to resist yourself for stopping, used in festivals or a casual day, up to your choices. So happy reading and enjoy this delicious sweets and comment your experiences. Surely I’ll love to read yours, do question me if you got anything in your mind 

Ingredient’s:

  • • Bengal Gram Flour (Basin): 3 cups
  • • All purpose Flour: 1 tbsp
  • • Semolina flour: 1 tsp
  • • Baking Powder: ½ tsp
  • • Sugar: 3 cups
  • • Water: 3 cups
  • • Milk: enough for preparing Batter & 3 spoons (whole milk)
  • • Green Cardamom Powder: ½ tsp
  • • Desi Ghee (optional, you can also use vegetable oil but ghee will give more taste)
  • • Saffron strands: few (optional; gives sensational aroma)
  • • Dry fruits: ½ cup (cashews, pistachio, almonds)

Equipment:

  • • Metal sieve (for pouring the batter into ghee)

Method:

  • • Firstly take a deep pot and put it on stove (medium heat), add sugar and water on it. Let it boil, scum will be appeared on top. Pour it out and boil till one strand consistency. After done with it, add cardamom powder and keep it in warm place.
  • • Now, take a bowl; add gram flour, all purpose flour, semolina and baking powder in it. Mix it well, and then slowly add milk until end up with a thick batter. Mix it till smooth, no remaining lumps.
  • • Warm desi ghee in a deep wok and pour batter through a fine metal sieve. Fry until golden (It’ll be done faster in Desi Ghee as compared to other oils). Now, pour them and drop them in that sugar sauce. Repeat the process until all batter is done. Rest the beads in sugar for about ½ an hour.
  • • Take a frying pan, slightly warm up the milk (3 tbsp) mix saffron strands, let them sit for five minutes, now took off the strands and your saffron milk is ready to use.
  • • Pour out the beads in a tray, add dry nuts and saffron milk and mix plus crush them with clean hands.
  • • Now, grease your hands and make laddoos of normal size (or whatever you want).
  • • Let them cool at room temperature and then refrigerate them. 

Tips & Tricks:

  • • You can add different food colors of your own choice to look more delicious to children.
  • • It is healthiest food, very energetic for everyone (due to high calories)
  • • You can store them for up to one month in an air tight jar.
  • • Gram Flour have a healing power in it, it not only gives calories but also heals tissues. It can fill your temptation needs.

Easy frothing of Milk

Well, I really got too many questions about frothing of milk. Everybody there ask me easy and appropriate way of frothing milk, for different usage (coffee, tea, etc). Here is my very own way, an easy one, hope so you’d like it and try it.. Happy reading.. 🙂

1. Firstly take a pan and heat up milk, (I prefer full-fat milk) enough hot that you can easily dip your finger inside. Put the gas off and pour milk in a cup (wide enough to insert a beater).

2. Now, insert beater and start beating into milk (pour half cup milk at a time). Small bubbles will start appearing and volume of milk will be increasing.

3. Beat till the volume of milk get doubled and then stop beating. Put your cup in microwave oven and heat up for a minute (at full speed) and then pour this foamy milk on your coffee, tea, beverages, shakes or whatever you like.

Enjoy your drink, you’ll get silky and creamy froth milk till the last sip..
